Banana Nut Bread

Makes 8 servings



Cooking spray
1/4 cup butter, softened
1/2 cup Whole Earth Sweet Granules
5 Whole Earth Sticks
3/4 cup mashed very ripe bananas
1/4 cup buttermilk
1 egg
1 teaspoon vanilla extract
1/4 teaspoon banana extract
1-1/4 cups plus 2 tablespoons all-purpose flour
3/4 teaspoon ground cinnamon
1/2 baking soda
1/2 teaspoon salt
3 tablespoons chopped pecans, divided
1 tablespoon chopped walnuts


  1. Preheat oven to 180°C. Spray 20cm x 10cm loaf pan with cooking spray; set aside.

  2. Beat butter, Whole Earth Sweetener Granules, and Sticks until combined. Beat in bananas, buttermilk, egg and extracts until blended. Stir in dry ingredients, 2 tablespoons of the pecans and the walnuts. Spoon batter into prepared pan. Sprinkle remaining 1 tablespoon pecans over the top.

  3. Bake 50 to 60 minutes or until wooden pick inserted near center comes out clean. Let bread cool in pan 10 minutes. Carefully remove bread and cool completely on wire rack.
